Olivier salad, loved by many, can become healthier if you replace mayonnaise with Greek yogurt and add more herbs and vegetables, says Sofya Eliashevich, head of the laboratory for research and dietary behavior modification of the National Medical Research Center for Therapeutic and Preventive Medicine of the Russian Ministry of Health. telegram channel departments.

The expert reiterates that a safe portion of a traditional Olivier salad is considered 100 grams, which is about two to three tablespoons. However, the serving size can be doubled without harming your health and figure if you make a healthier salad. To do this, you need to replace mayonnaise with Greek yogurt with mustard, use grilled turkey or chicken instead of sausage, and add fresh herbs and vegetables to the dish.
The Ministry of Health even published a recipe for “Healthy Olivier”, the ingredients include eggs (two pieces), one carrot, two fresh cucumbers, one apple, chicken fillet, avocado, green beans (0.5 cans) and natural yogurt (2.5-4%). It is recommended to cook fillet, eggs and carrots separately. Then cut all the ingredients into cubes and put them in a bowl, add green beans, season with yogurt to taste, salt and pepper.
“This modified recipe retains the festive taste, but at the same time contains 40-45% fewer calories and more protein, allowing you to double the portion (up to 200 grams) without compromising your health and figure,” notes Sofya Eliashevich.
